This light, fragrant spice adds a wonderful depth to apple cake. Add the spice to the fruit filling or directly into the dough. The rose petal perfume and chamomile calmness help create a delicate blend, which can also be used in place of the heavier flavour of Mixed Spice. Not to be dismissed in savoury dishes, try in broths, with cauliflower in rice dishes together with cardamom and lemon rind.
